Corn Blueberry Salad

Ever considered a salad for your Cinco de Mayo table? I’ve got the perfect recipe! It’s colorful, and with a nice helping of cilantro, red onion and a touch of cumin, this salad will fit right into the day’s taste palate. While Blueberry Corn Salad is not a traditional Mexican dish, it has the perfect flavors to pair with a more conventional dish such as tamales.

You might be thinking “blueberries and corn?” Oh my heavens, yes. Let’s talk a little bit about nutrition, shall we? Just the blueberries and corn alone help protect against heart disease and cancer and can also help maintain bone strength, mental health and blood pressure. Blueberries contain anthocyanin, which offers health benefits and gives the blueberries their blue color!
