Fresh Corn Salsa

I have a confession to make. Once in a while, I introduce Jeff as my “first husband.” People look at me funny when I do this, but inside, I am laughing hysterically. I have another confession. I am in love…again. This recipe for Fresh Corn Salsa may just be my “second husband,” if I can get it to commit.

 This recipe is the perfect appetizer for a Mexican food feast and is made using whole food ingredients. Fresh and cool, it is the perfect contribution to a summer picnic. This salsa is so delicious that I have even enjoyed it without chips by the spoonful.

Make it in bulk to enjoy as a snack or as an addition to a salad, tacos or a side dish. You can even pair with homemade healthy baked tortilla chips to dig in and share the love. Making tortilla chips might seem difficult at first glance, but this recipe makes it simple and can be done in under 30 minutes.
