Gameday Corn Dip

A bountiful garden was just not happening this year. I know you’ve probably been waiting for me to share our experience with our raised beds, since I mentioned them many times throughout this last winter. That, too, was abysmal. Too much rain, then, not enough rain.

The only thing that was plentiful was the jalapeno peppers. Out of our dozens that grew, we were able to use ONE of them in this recipe, ha! It’s a great make-ahead dip using canned corn and other ingredients you probably already have on hand. After school or practice, and just perfect for a football watch party, this hearty dish can be stored for days in the refrigerator allowing prep when it is convenient for your busy lifestyle.
