Gluten-Free Almond Shortbread Cookies

I love baking. With the cold winter winds outside, I enjoy relaxing and filling the house with that warm cookie scent. It’s definitely what gets me in the holiday spirit more than anything else. Not only do my boys love the after-product, but they like helping me make them too (even if it’s only to lick the leftover cookie dough off the mixer).

Before we know it, Christmas will be over and we’ll be taking down our beloved holiday decor. After all, there is no other time of year when baking cookies is as fitting. So no matter your crazy schedule, map out some time over these next few weeks to dig out your favorite recipe. While you’re digging that up, I have a delicious gluten-free almond shortbread cookie for you to try.

I’m glad I stumbled upon this recipe the other day. Take it from me, these Shortbread cookies are sure to melt in your mouth. Since this is a “thumbprint” recipe, be sure to use red raspberry jam for the center, which will create a pretty treat for your holiday cookie trays!
