Grilled Corn, Chicken and Bell Pepper Salad

Here in Missouri, we are so close to having the benefits of locally grown veggies available in the grocery store and at the farmer’s markets. To prepare for what’s to come, I tried this recipe just the other night when the neighbors visited. Really, it’s more of a meal than a salad and combines fresh, warm flavors from the garden in a gluten-free dish. With only three tablespoons of heavy cream, it has the taste of comfort food without weighing anyone down for the rest of the evening.
