Grilled Steak and Elote Tacos

Fall is in full swing. The weather is cooler, the air is crisper and the days are growing consistently shorter. But just because we’re moving into the comfort food time of year, doesn’t mean we can’t enjoy some fresh grilled flavors!

I love the flavor of food fresh off the grill. Since I have lots of corn in the freezer, I used that for this recipe instead of corn-on-the-cob, which is hard to find as we move into the cooler fall months. If it’s easier, you can roast it in the oven instead of grilling to make the elote. You can also use just about any kind of cheese to top the tacos, however – cotija is a salty Mexican cheese made from cow’s milk that I believe makes this recipe complete.
