Lemon Cornmeal Cake

Before we moved to the farm we currently reside on, we lived in a suburban neighborhood in town. We had the friendliest, most generous neighbors, and luckily for us, that trend has continued in the country. Back then, when it snowed, Jeff would shovel the driveway of one of our older neighbors.  In return, she would bake him a plate of scrumptious lemon cookies.

This cake recipe reminds me so much of those cookies and my sister-in-law’s cornbread recipe, which combines cornbread mix with yellow cake mix. Sweet, but not too sweet. Lemony, but not sour. Perfect for a spring tea party!
