Need a little time to catch up on laundry, pay some bills or help the kids with a few homework assignments? Here’s a dish that’s easy to fix and an hour to bake. As a kid growing up, this was one of my mom’s specialties. You’ve probably had scalloped corn, and if you have, you know how delicious it is. I’ll bet you’ve never had it paired with pork chops, though. My recipe adds a little twist on Mom’s, using chopped red and green pepper for some added color and nice flavor.
