Spanish Rice

The first dish I ever made from scratch was some kind of vegetable mix cooked in a pan with butter. My aunt was such a sport; she ate it, telling me how delicious it was. This was the encouragement I needed – that all kids need – to keep learning, growing and pursuing their dreams.

In honor of Aunt Kate, who was in her own right quite a cook, I dedicate the next recipe, which I also created from scratch. It’s so easy to replicate or modify a recipe found online or in a recipe book. Trust me, I do this often! It also stimulates my creativity to come up with recipes based on what I have in the pantry or fridge. Sure this is a little riskier, but it can lead to finding rewarding dishes and flavor combinations!
