Sweet Corn and Spring Vegetable Pasta

After commiserating with a farmer’s wife about my woeful attempts to raise sweet corn (yes, really!), she suggested we expand from a few rows in the garden to an acre or an acre and a half. Now I’m really looking forward to summer, and our neighbors and the rest of the family will be the true winners when we share our bounty.

Speaking of corn, I found the most delightful spring dish online. Looks like a pasta salad, but it isn’t. It’s warm and full of pasta and veggies, including three ears of corn, which you’ll soon be able to find in the grocery store. Although this recipe calls for asparagus, corn, peas and cherry tomatoes, I think you could dice up some carrots, precook in the microwave for a few minutes and include them for a nice shot of beta-carotene, vitamin K and potassium.
