Besides my Black Bean Soup recipe, which I think I’ve mentioned to you a few times … this is one of my very favorite recipes. Everyone in my family, from immediate to extended, loves it. This fast, healthy recipe is perfect for when you’re having guests over on a chilly early spring evening because you can throw everything into a pot and forget about it until it’s time to eat. This recipe typically yields a few leftovers, which makes me like it even more.
I use organic, non-GMO veggies, and grass-fed beef for the hamburger. We use cheddar cheese, sour cream and crushed tortilla strips for garnish. It doesn’t get any better than this!
