White Cheddar Baked Corn

Traditionally, we spend Thanksgiving with my brother, sister-in-law and two nephews. I love the holidays because it means time spent with family and time to relax and decompress. Let’s be honest, I’ll take any excuse to spend time with family. Thanksgiving is probably my favorite holiday – I mean it is centered around food after all! If you’ve learned anything through A Bushel and A Plate, it’s that I certainly do love food. Thanksgiving Day food is the best, but what’s just as good? The meals you can make from the leftovers and extra ingredients. This Thanksgiving I’m introducing a meal that you can make from either.

Doesn’t that after-Thanksgiving slump hit all of us? Keep this recipe tucked away for a Thanksgiving Day side-dish option or snack for the days to follow. It’s super simple to make. With tons of corn and cheese, the kids love it and it smells amazing coming from the oven. I think this would fall under the hearty home cooked food college kids are delighted to come home to, although mine aren’t quite there yet. 

This recipe calls for fresh corn, but you can use the equivalent of frozen. To get the best results any time you use frozen corn, put it in a skillet and stir-fry, rather than steaming or boiling.
